Chemex

- Put water on to boil
- Weigh out desired amount of coffee (a good place to start is 48 grams which will yield about 3-4 cups of coffee).
- Place filter (Chemex brand only) gently in Chemex with three sides toward the spout, one side toward the handle.
- Thoroughly wet the filter with hot water. This step will eliminate any paper taste from the filter and also heat your Chemex.
- Carefully pour water out of Chemex without removing the filter.
- Grind coffee to a medium grind.
- Place Chemex on scale, add coffee and tare scale to zero.
- Once water boils, let cool for about 30 seconds. Transfer water to your Buono kettle if you have one.
- Begin brewing by pouring 100 g water over coffee to completely saturate grinds.
- Let your coffee bloom. Bloom time will vary depending on freshness of coffee but a good rule of thumb is 30-90 seconds.
- Pour water in concentric circles slowly into the middle of the coffee. Slow and steady wins the race. Fight the urge to pour down the sides, it will result in an uneven extraction. Continue pouring until your scale reads 710 grams (if using 48 grams of coffee).
- Once coffee is done dripping, discard filter and serve immediately or pour into an insulated carafe.
